I made myself peanut butter jam pancakes this morning which inspired me to share this jam recipe with you! It's super easy and healthy. It is made with only two ingredients and is free of refined sugar. Just a disclaimer - the measurements here are strictly approximations. I'm a very trial and error type cook so that'll give you the freedom to customise your measurements and get the jam consistency of your dreams!
1 cup frozen (or fresh) berries of choice
1 tbsp chia seeds
Place frozen berries and chia seeds in a pot on low heat.* Place the lid on the pot and let the berries sweat.
Stir frequently to prevent the berries from sticking to the bottom of the pot.
Once the berries have stewed completely, remove the jam from the heat and leave to cool.
Transfer the jam to a glass jar for storage. Keep in the fridge for 3 - 4 days.
I would recommend starting with about 1 teaspoon to 1/2 tablespoon of seeds and add until you get the consistency you desire. Note that the seeds will take a few minutes to swell and thicken up, so be patient before you add more.
If using fresh berries, add a tiny bit of water, otherwise the berries will stick to the bottom of the pot.
